Easy Egg Bake

With our busy therapy schedule these days I’ve been trying to make easy, quick, protein-rich breakfasts to take on the road and keep us out of the fast food drive thru.

When I made these this morning I decided to snap a few pictures and share the recipe with you guys.

Hope you enjoy!

Preheat oven to 350 degrees.

Lightly grease a muffin tin.

Line each opening with turkey sandwich meat.

Fill each turkey-lined opening with a whole uncooked egg. (As I got to this stage I realized we were short 3 eggs, that’s why there are empty spaces.)

Season with salt and pepper, then top each egg cup with a small amount of shredded cheese of your choice.

Bake at 350 for 20 minutes.

Eat hot or refrigerate for next day.

Serve with salsa, if desired.

Enjoy!

Btw, with this new busy therapy schedule comes a loss of photography time, so I need to put photography Wednesdays on hold for now, but I’ll continue to share photography tips on a less scheduled basis. Sorry about that!

Not recently, but need to. Tuesdays and Thursdays are going to be our long days, so I’ll probably make them slow cooker days. :)

I appreciate all of your photo tips, but I totally understand your need to cut back and take care of your children’s needs. This is a huge thing you and Steve are doing for Z and it will change his future. So, spend all the time you can thinking of that and not too much time worrying about us “would-be professional photographers.” We have to grow up and learn a few things on our own…. :) Just speaking for myself. hehehehe
