Easy Egg Bake

by SomeGirl on August 23, 2011 · 19 comments

With our busy therapy schedule these days I’ve been trying to make easy, quick, protein-rich breakfasts to take on the road and keep us out of the fast food drive thru.

When I made these this morning I decided to snap a few pictures and share the recipe with you guys.

Hope you enjoy!

Preheat oven to 350 degrees.

Lightly grease a muffin tin.

Line each opening with turkey sandwich meat.

Fill each turkey-lined opening with a whole uncooked egg. (As I got to this stage I realized we were short 3 eggs, that’s why there are empty spaces.)

Season with salt and pepper, then top each egg cup with a small amount of shredded cheese of your choice.

Bake at 350 for 20 minutes.

Eat hot or refrigerate for next day.

Serve with salsa, if desired.

Btw, with this new busy therapy schedule comes a loss of photography time, so I need to put photography Wednesdays on hold for now, but I’ll continue to share photography tips on a less scheduled basis. Sorry about that!

Wow! Those look yummy and there are so many ways to modify the recipe-even for this gluten-dairy free girl:) Thank you!

That’s cool that it can be modified to be gluten-dairy free… hadn’t thought about that! Hope you enjoy! :)

Those look very tasty! Are you using your slow cooker to take care of dinners?

Not recently, but need to. Tuesdays and Thursdays are going to be our long days, so I’ll probably make them slow cooker days. :)

That sounds good! When I first started reading I thought gross, but it looks good. Can’t wait to try it!

:) Hope you enjoy them!

That not only looks good, I’ll bet it tastes great!

Thanks for taking the time to comment, Marilynne! :)

I appreciate all of your photo tips, but I totally understand your need to cut back and take care of your children’s needs. This is a huge thing you and Steve are doing for Z and it will change his future. So, spend all the time you can thinking of that and not too much time worrying about us “would-be professional photographers.” We have to grow up and learn a few things on our own…. :) Just speaking for myself. hehehehe

Thank you, Gail. I’ll not forget about my sweet “up-and-coming professional photographers” (like the way I changed that?). ;) Thank you for understanding and for your encouraging words! Love you!! xoxo

I can’t wait to try this – kind of tired of oatmeal!

Yes! I’ve become tired of oatmeal, too!

I am SO TRYING THIS!! I’m so excited. My younger two boys won’t eat them (they hate eggs) but I need high protein breakfast options.

I’m the same way! And it’s hard to find quick and easy protein options. If I find more I’ll share them. :) Hope you enjoy!

This is a great idea! My boys would eat eggs every morning (I’m kind of a muffin girl!) so they will love this! :)

Hmmm… wonder if you could make muffins in some and eggs in the others? Now that would be a true time saver! ;) Hope they enjoy them!

mountain mama

wow! what a great idea!!!!!!!!!

Are you Martha Stewart? ;) Thanks for sharing! I’ll have to try these. How is therapy going???

That is genius- what a super great idea! I love it!
Just wanted to stop by and say hello! Looking forward to meeting you at Mamas Write tomorrow!
