Recipe: Chocolate Covered Pomegranate Seeds

Mmmmm….. I tried some chocolate covered pomegranate seeds for the first time last month. I never would have thought of something like that on my own, but they were good!

I’ve thought some about looking for them at our local natural foods store, but since my family has gone dairy free (for several different reasons) I decided not to bother.

Then, while hanging out with my guys at the dinner table, I looked over and saw a lonely pomegranate sitting in the fruit basket and it hit me…. Why don’t I try to make some at home??

And, since I had a bag of Enjoy Life dairy free, soy free, nut free, gluten free, but not taste free, chocolate chips in the pantry I decided to give it a try. And, boy, am I glad I did! This is a recipe worth sharing!

First, take out all the seeds from the pomegranate, rinse them, and pat them dry with a dish towel.


Pour a half a bag of semi sweet chocolate chips into a small sauce pan.

(please excuse the lack of photo quality… taken quickly on my camera phone. Wasn’t sure that the recipe would turn out well, so I didn’t think too much about the photos at the time.)

Melt on low heat. (I LOVE my new stove!)


Pour pomegranate seeds into the melted chocolate and mix around. Once the seeds are thoroughly covered, pour the mixture out onto a parchment paper lined baking sheet. Flatten the mixture out gently with your hands.


Place baking sheet in fridge to cool.


Once the chocolate hardens, which took about 20 minutes or so for me, pull the baking sheet out and break the chocolate into bite-size pieces and enjoy!

Beware: It’s hard to stop eating them once you start!

Ok, I must admit that this sounds disgusting to me. lol But I’m intrigued and may just have to try them. Can you get pomegranates in Kansas? :)

I thought they sounded weird, too… But then I tried them and was SOLD! However, my littlest one spit his out. ;) lol

What a great stove that you have a “melt” button. These look so yummy. I saw them at Costco, each individually covered with chocolate. This looks even better.

Yes, I love it! :) I had some individually covered ones from Whole Foods. They were good, but these were juicier.

It’s a Kitchen Aid, I think. (I’m out of time and trying to sneak in one more comment before I have to go to an appointment. If it’s something different I’ll come back and reply with the real brand.) :)
